This is a game-in-progress I've been working on for the past couple weeks. I've gotten pretty far, but there are some glitches that are not yet sorted out, and the scoring system is off, and only the single-player option works.
It's based on the game: Cosmic Wimpout... but I will change it around once i'm through, so I don't violate copyright laws...
Here's how it works:
You roll the dice, and then drag the ones you want to keep into their respective slots. Once they're all there, you can press finalize to keep them, and your score will be updated. If you roll and don't get any points doing so, then you lose all your points for the round, so end your turn if you don't think you can get any points, don't roll!
The point system works as follows: There are numbers and shapes on each die. Fives and tens are both numbers and are worth five and ten points respectively.
The shapes are different. They are not worth anything on their own, but if you get three of them, your score is equal to the number on the dice times ten. The same triple rule goes for the numbers.
Three tens = 100pts Three six shapes = 60 pts, etc...
Using all three die allows you to roll again, while adding onto your previous score. Have fun, even though you should be able to cheat pretty easily since the game is not yet complete. I'll let you know when it's done, and I'll post it on my site.
Yeah the mechanism kinda sucks in that version... I'll post a more updated version in a bit... But try pressing either finalize or roll first before you try dragging... sometimes it messes up...

and to answer the other question... It takes practice, but you get good at it after a while...
